- Fry the duck breast. Deglaze the pan with honey, the beer and the brown stock. Pass through a sieve and reduce further
- Peel the mango and cut into thin slices. Arrange on the plate in a fan shape. Place a small piece of cheese on top and heat in the oven for a few minutes until the cheese has melted.
- Slice the meat and arrange on the plate. Drizzle with the sauce.
