Pêche Mel Bush

Beer flavored with peach juice and added touches of caramel and mango

Type: a blue cheese / Example: Jersey Blue or Bleu de Scailton

A sweet beer with aromas of peaches and exotic fruits. Pairing it up with either of these slightly sour, zesty blue cheeses will give a beautiful contrast.

Recipe : "Duck breast with mango, Fourme d’Ambert and Pêche Mel Bush" — Stefaan Couttenye

Ingredients :

  • Fourme d’Ambert

  • Pêche Mel Bush

  • duck breast

  • honey

  • mango

  • brown stock

Instructions :

        1. Fry the duck breast. Deglaze the pan with honey, the beer and the brown stock. Pass through a sieve and reduce further
        2. Peel the mango and cut into thin slices. Arrange on the plate in a fan shape. Place a small piece of cheese on top and heat in the oven for a few minutes until the cheese has melted.
        3. Slice the meat and arrange on the plate. Drizzle with the sauce.
